I’ve had gooey chocolate chip pretzel cookies on the brain. I know, weird. But when I finally got to the kitchen, I didn’t have any baking soda. Seriously?! I did, however, have a box of chocolate fudge cake mix. Whew! So, double chocolate chip it is.
Double Chocolate Chip Pretzel Bites
Mix the cake mix, eggs and vegetable oil together in a mixer for about 1-2 minutes. Fold in the pretzels and chocolate chips. Drop on ungreased cookie sheet and bake at 350 degrees for about 8 minutes.
Thank goodness we’re at the end of bathing suit season.
Every once in awhile I do love to bake. A friend was throwing a baby shower and needed sweet treats so I whipped up some cupcakes. Had the baby been a boy, I would have ditched the raspberry for blueberry or even blackberry filling. Yum! Want to make these cupcakes at home? Keep reading below.
Lemon Cupcakes with Raspberry Filling
Lemon Cake Recipe (In a pinch? Lemon cake mix will do)
Pour into cupcake holders and bake at 350 degrees for about 18 minutes.
Raspberry Filling:
Thaw the berries and smash them. Combine the smashed raspberries with the lemon juice, sugar and corn syrup in a small saucepan. Whisk continuously over medium heat until it comes to a boil. Boil for about a minute.
Lemon Cream Cheese Frosting Recipe:
Mix together butter, cream cheese and lemon zest. Mix well. Mix in confectioners’ sugar. Mix until smooth. Mix in lemon juice a little bit at a time until the icing is just right.
Infuse cooled lemon cupcakes with raspberry filling [I use a pastry bag]. Top with lemon cream cheese frosting and a fresh raspberry. Enjoy!
