Double Chocolate Chip Pretzel Cookies

I’ve had gooey chocolate chip pretzel cookies on the brain. I know, weird. But when I finally got to the kitchen, I didn’t have any baking soda. Seriously?! I did, however, have a box of chocolate fudge cake mix. Whew! So, double chocolate chip it is.

Double Chocolate Chip Pretzel Bites

• Chocolate fudge cake mix
• 2 eggs
• 1/2 C vegetable oil
• 1 1/2 C pretzel sticks, chopped
• 1 bag chocolate chips/chunks

Mix the cake mix, eggs and vegetable oil together in a mixer for about 1-2 minutes. Fold in the pretzels and chocolate chips. Drop on ungreased cookie sheet and bake at 350 degrees for about 8 minutes.

Thank goodness we’re at the end of bathing suit season.

Lemon Raspberry Cupcakes

Every once in awhile I do love to bake. A friend was throwing a baby shower and needed sweet treats so I whipped up some cupcakes. Had the baby been a boy, I would have ditched the raspberry for blueberry or even blackberry filling. Yum! Want to make these cupcakes at home? Keep reading below.

Lemon Cupcakes with Raspberry Filling

Lemon Cake Recipe (In a pinch? Lemon cake mix will do)

• 2 1/2 C flour
• 2 1/2 tsp baking powder
• 1/2 tsp salt
• 1/2 C butter
• 1 Tbsp lemon zest
• 1 3/4 C sugar
• 6 egg yolks
• 1 1/8 C milk

Pour into cupcake holders and bake at 350 degrees for about 18 minutes.

Raspberry Filling:

• 12oz package of frozen raspberries
• Squeeze of lemon juice (about 1 Tbsp)
• 1/4 C of sugar
• Squeeze of corn syrup (about 1 Tbsp)

Thaw the berries and smash them. Combine the smashed raspberries with the lemon juice, sugar and corn syrup in a small saucepan. Whisk continuously over medium heat until it comes to a boil. Boil for about a minute.

Lemon Cream Cheese Frosting Recipe:

• 1/2 C (1 stick) of butter at room temperature
• 1 8oz package of cream cheese, softened
• Healthy dose of lemon zest (about 2 Tbsp)
• 2 C confectioners’ sugar
• 2 squeezes of lemon juice (about 2-4 Tbsp depending on your taste & texture preferences)

Mix together butter, cream cheese and lemon zest. Mix well. Mix in confectioners’ sugar. Mix until smooth. Mix in lemon juice a little bit at a time until the icing is just right.

Infuse cooled lemon cupcakes with raspberry filling [I use a pastry bag]. Top with lemon cream cheese frosting and a fresh raspberry. Enjoy!

Nike ‘Make It Count’ even in the subway.

Nearly 38 ads for a single campaign leads to one major subway station takeover. Sounds overbearing and obnoxious? Not for Nike.

After stepping off a Manhattan bound train in NYC it was hard not to notice the ads that lined the walls for Nike’s “Life is a Sport. Make it Count.” campaign promoting Nike+ FuelBand – a wristband that tracks your daily activity.

The message of the campaign is simple  – everything you do, even outside of the gym, counts – but this campaign goes beyond the ink of a print ad. Each ad includes the hashtag #counts and encourages users to tweet @NikeNYC with their own personal methods. Some of the ads even featured these tweets.

A great way to foster a community of Nike fans that are dedicated to staying fit in NYC even outside of the gym and of course promote FuelBand, right?

After a quick search on Twitter I had a hard time finding anyone using #Counts but Nike also seems to “own” #MakeItCount which holds more of the buzz.

What the ad doesn’t say: If you link an image or video to your tweets and tag them with either #Counts or #MakeItCount, they will filter on to Nike.com integrating your photo with a collage of nearly 157,000 other images. See for yourself below. Kudos, Nike.

Not that I’m keeping tabs [okay, maybe I am] but it seems Forbes, Huffington Post, even Praxis Strategy Group say it’s a great time to be in Columbus… and I couldn’t agree more.
